Malai Chop

 





Ingredients
  • Milk (500ml)
  • Dry Milk powder(1cup)
  • Extra milk(1/2 cup)
  • Ghee/clarified butter(1/4 cup)
  • Sugar (1cup)
  • pink food color(1 pinch)
  • water for making chasni
  • Some chopped pista
Preparation

First make the khoya (khoa)...

1. Take dry milk powder, ghee and milk(1/2 cup) in a microwave safe bowl.











2. Microwave it for 4 min...and in every 2 min stir it.3. Now your khoya or khoa is ready.(see the pic)
4. Now take this khoya, little milk(1-2 spoon) and pinch of pink food color and grind it


5. So that the khoya becomes paste, that is called malai.Your malai is ready now.

Preparing of paneer (chhena)

1. Take 500ml of milk in a pan and boil it and add some vinegar.

2. Paneer should be soft, drain the water completely.(see the pic)



3. Mash the paneer using your palm and make the paneer into soft paste(see the pic)


4. Take small amount of soft paneer and make a square shape.(see the pic)


5. To make the chasni (seera) add 2 cups water and 1cup sugar and boil it.
In the boiling chasni leave the square shape paneer. Boil for 10 min.(see the pic)


6. After 10 min take out them and let them slightly cool.
 Cut them diagonally to make them triangular shape.Now cut them width wise..(see the pic)


7. Now Add some Chopped pista in the malai, and add malai in between the triangular shape sweet(see the pic)

8. Sprinkle some chopped pista over all the sweet.
Now your Malai Chop is ready. Enjoy it with your friends...

Hariyali Paneer Tikka


Ingredients
  • Paneer (200 gm,Blanch and cut it into cubes)
  • Gram flour(2tbsp)
  • Corn flour(1tbsp)
  • Maida(1tsp)
  • Jaljeera/Pani puri Masala powder(1tbsp)
  • Garam Masala(1/2 tsp)
  • Yogurt(2tbsp)
  • Salt to taste
  • Coriander(1 cup)
  • Mint leaves(1/4 cup)
  • Green chillies (4-5)
  • (Grind Coriander,mint and green chili to a coarse )
  • Red,green,yellow,orange bell pepper, onion,tomato(1/4 cup each, cut into cubes)
  • Oil for shallow frying.
Preparation

  1. Mix all the above ingredients with the paneer. (Except onion,tomato,bell peppers). Marinate and keep aside for ½ hour.

2. In a pan add sweet bell peppers,onion,tomato,garam masala and saute for 1 min(without oil), then take it out in a plate.

3. Now shallow fry the paneer on a tawa.
4. Arrange the fried paneer cubes with sauted bell peppers,tomato and onion in a skewer or bamboo stick.

5. Grill the paneer skewers for 2 min in the griller or oven.
6. Now your Hariyali paneer tikka is ready. Serve hot with green chutney.

Paneer Makhani



Ingredients
  • Paneer (200gm)
  • Ginger-garlic paste(2tsp)
  • Tomato paste(1 medium size)
  • Cashew nut(5-6 piece)
  • Turmeric powder(1tsp)
  • Red chili powder(1tsp)
  • Coriander pdr(1tsp)
  • Garam masala (1tsp)
  • Fenugreek leaves/kasuri methi(1tsp)
  • Fried onion(optional)
  • Cream/milk(2tsp)
  • Orange food color(a pinch)
  • Oil as needed
  • Salt to taste
  • Sugar (2 tsp)
  • water as needed.

Preparation
  1. Cut the paneer into cubes or as you wish. Keep aside.
  2. (You can shallow fry the paneer for 1 min,if it 2-3 days old ,if not use the same)
  3. Make a fine paste of cashewnut with some water.
  4. Heat oil in a pan,add ginger-garlic paste and fry 1 min and then add tomato paste,salt, turmeric pdr, red chili pdr,coriander pdr.Fry for 4-5 min by adding water.
  5. Now add cashew paste and some water to it and cook for a while.
  6. Now add the paneer, fenugreek leaves, sugar, garam masala and water. Cook for 2-3 min.
  7. Add cream/milk to it and switch off the  flame. If you wish add some fried onion on it.
  8. Now your Paneer Makhani is ready.serve with Roti or Naan.

Paneer Butter Masala


Ingredients
  • Paneer (200gm)
  • Onion sliced (2 medium size)
  • Ginger-garlic paste(2tsp)
  • Water melon seeds/char magaj (2tsp)
  • Cashew nut(5-6 piece)
  • Turmeric powder(1tsp)
  • Red chili powder(1tsp)
  • Garam masala (1tsp)
  • Fenugreek leaves/kasuri methi(1tsp)
  • Fried onion(optional)
  • Butter (2tsp)
  • Oil as needed
  • Salt to taste
  • Sugar (2 tsp)
  • water as needed.
Preparation

  3. Heat oil in a pan, add sliced onion,saute for 2-3 min till golden brown.
  4. Add ginger-garlic paste,salt, turmeric powder, red chili powder.Fry for 4-5 min by adding water.

  6. Now add the paneer, fenugreek leaves, sugar, garam masala and water. Cook for 2-3 min.
  7. Add butter to it and switch off the  flame. If you wish add some fried onion on it.
  8. Now your Paneer butter masala is ready.serve with Roti or Naan.

    Paneer Do Pyaza


    Ingredients
    • Paneer(250gm)
    • Onion sliced(1/2 cup)
    • Onion cubed(1  cup)
    • Ginger-garlic paste(1tbsp)
    • Tomato chopped(1 small size)
    • Turmeric pwd(2tsp)
    • Red chili pwd(2tsp)
    • Coriander pwd(2tsp)
    • Garam masala pwd(1tsp)
    • Bay leaf(1)
    • Sugar (1tsp)
    • Salt to taste
    • Oil and water as needed
    Preparation
    1. Heat oil in a pan, put bay leaf,sliced onion, fry till golden brown.
    2. Add ginger-garlic paste,chopped tomato,turmeric,red chili,salt to it. Fry till the masala leaves oil on it.
    3. Add Paneer and cook for 5 min.
    4. Add Cubed onion,garam masala,water,sugar to it and cook for 2-3 min. switch off the flame. sprinkle some coriander leaves on it.
    5. Now your Paneer Do Pyaza is ready. Serve with Roti or Naan.

    Paneer & Mushroom Tikka


     
    Ingredients
    • Paneer (200 gm)
    • Button Mushroom(200 gm)
    • Green capsicum/green bell pepper(1/2 cup)
    • Red capsicum/red bell pepper(1/2 cup)
    • Yellow capsicum/yellow bell pepper(1/2 cup)
    • Orange capsicum/orange bell pepper(1/2 cup)
    • Onion(1/2 cup)
    • Baby tomato/Grape tomato(1/2 cup)
    • Yogurt(3tbsp)
    • ginger(1 inch)
    • Garlic(5 cloves)
    • Green chili(2-3)
    • Tandoori masala (2tsp)(you can use home made one or ready made)
    • Chat masala(2tsp)
    • Lemon juice(2tsp)
    • Fenugreek leaves/kasuri methi(2tsp)
    • Turmeric powder(1/2 tsp)
    • Red chili powder(2tsp)
    • Bamboo stick/BBQ skewer(5-6)
    • Salt to taste
    • Oil (3 tsp)
    Preparation

    1. Cut paneer,onion,all capsicum into cubes. keep mushroom and baby tomato as it is.
    2. make a fine paste of garlic, ginger and green chili.
    3. Now in a large bowl, add ginger-garlic paste,yogurt,all vegetables, paneer, tandoori masala, fenugreek leaves,turmeric powder, red chili powder, lemon juice,chat masala, salt and oil.
    4. Mix them as all are well coated.keep them 4-5 hours in side the fridge.
    5. After 4-5 hours, insert the vegetables, paneer one by one through the skewer/bamboo stick(soaked in water before 1 hour).
    6. Pre heat the oven for 10 min. now place an aluminum foil/baking tray in side the oven and put the vegetable/paneer skewer on it.
    7. Bake  on 400 degree Fahrenheit for 20 min and broil for 3 min.Take out the baking tray from the oven.
    8. Now your Paneer and Mushroom Tikka are ready.Sprinkle some chat masala on it. Serve hot with mint chutney.







    Paneer Chilli - Gravy


    Ingredients
    • Paneer(200gm,diced)
    • Onion (1/2 cup, cut into cube)
    • Capsicum/ Green bell pepper(1/2 cup, cut into cube)
    • Garlic chopped(2tbsp)
    • Green chili chopped(1tbsp)
    • Cornflour (1/2 cup)
    • Soya sauce (2tsp)
    • White pepper powder(1tsp)
    • Tomato kechup (1tbsp)
    • Vinegar(1tsp)
    • Sugar (1/2 tsp)
    • Dry red chili(2 medium size,chopped)
    • Water as needed
    • oil for fry
    • Spring onion chopped(1/2 cup, optional)
    • Salt to taste
    Preparation

    1. Take paneer in a bowl, add cornflour,salt and mix well.Deep fry Paneer pieces and keep aside.
    2. Heat 4 tbsp oil in a frying pan on high flame, add onion, capsicum, chopped garlic and stir fry for 2 minutes.
    3. Add water(3 cups),Soya sauce, white pepper powder, tomato kechup, sugar, vinegar, dry red chili, green chili chopped.
    4. Add salt to taste and bring to boil 3 minutes and fried Paneer to the gravy.(You can adjust to your gravy by adding water
    5. Now mix 2 tsp of cornflour and 1/2 cup of water in a bowl and add to the gravy.Let the gravy becomes thick.
    6. Add spring onion and switch off the flame.
    7. Now your Paneer Chilli Gravy is ready.Serve hot with Chinese noodles.

    Schezwan Paneer


    Ingredients

    • Paneer/cottage cheese(250 gm)
    • Capsicum/ green bell pepper(1/2 cup)
    • Onion (1cup)
    • Garlic finely chopped(2 tbsp)
    • Red chili paste (1 tsp)
    • Green chili(1 )
    • Soya sauce (1 tbsp)
    • Schezwan sauce(2-3 tbsp)
    • Red food color(pinch, optional)
    • Tomato Kechup(2tbsp)
    • Spring onion(optional)
    • coriander leaves
    • Oil
    • Salt to taste

    Preparation


    1. Cut the paneer into cubes.Cut the onion and capsicum into cubes.
    2. Put a pan, add oil and deep fry the paneer cubes for 1-2 minutes.
    3. Take another pan, add oil, when the oil is hot add chopped garlic.
    4. Saute the garlic for 1 minute add red chili paste,schezwan sauce, onion, capsicum, fry them for few minutes add green chili, soya sauce and little water.
    5. Now add fried paneer, spring onion,tomato kechup, salt.At last add chopped coriander leaves.
    6. Now your Schezwan  Paneer  is ready. Serve with Roti or noodles or you can eat it as a stater.

    Paneer Chilli - Dry



    Ingredients
    • Paneer/cottage cheese(250 gm)
    • Capsicum/ green bell pepper(1/2 cup)
    • Onion (1cup)
    • Garlic finely chopped(2 tbsp)
    • Red chili paste (1 tsp)
    • Green chili(1 )
    • Soya sauce (1 tbsp)
    • Spring onion(optional)
    • coriander leaves
    • Oil
    • Salt to taste



    Preparation
    1. Cut the paneer into cubes.Cut the onion and capsicum into cubes.
    2. Put a pan, add oil and deep fry the paneer cubes for 1-2 minutes.
    3. Take another pan, add oil, when the oil is hot add chopped garlic.

    Paneer Tikka Masala

    Ingredients

    • Paneer(200gm, cut into thin slice)
    • Ginger-garlic paste(2tsp)
    • Yogurt (2tsp)
    • Chili powder(2tsp)
    • Coriander powder(2tsp)
    • Lemon juice (1tsp)
    • Fenugreek leaves/Kasuri methi(2 tsp)
    • Turmeric powder(2tsp)
    • Tomato (1 large)
    • Cumin seeds(1 tsp)
    • Salt to taste
    • Sugar(1tsp)
    • Oil
    • Water as needed
    • Coriander leaves for garnishing

    Preparation

    For Tikka

    1. Take a bowl, put paneer ,ginger-garlic paste(2tsp), yogurt,chili powder, coriander powder, lemon juice,fenugreek leaves(1 pinch)
    2. Marinate the paneer and keep inside the fridge.
    3. After 1 hour, put a non stick pan/tawa on flame and put oil on it.
    4. when the oil warm(not hot) put the marinated paneer one by one gently.
    5. Fry the paneer for 1-2 min and keep the out.

    For Tikka Masala
    1.  Now take the tomato and cumin seeds and make it a fine paste, keep aside.
    2. Now using the same pan, add some oil,when the oil is hot add tomato paste, salt, turmeric powder, chili powder, coriander powder, garam masala, rest fenugreek leaves.
    3. Fry it for 3-4 min, add sugar and some water.
    4. Now add the paneer tikkas to the masala, cook it for 2-3 min on low heat.
    5. Now Paneer tikka masala is ready. Garnish with some coriander leaves. Serve it with Roti or naan.
