Shrimp Tikka with Fresh Orange Juice





Ingredients

  • Large shrimp (8-10, peeled,leaving tail attached)
  • Vegetable oil (3-4 tsp)
  • Fresh lime juice (2tsp)
  • Jalapeno/Green chili Paste(about 2 teaspoons/to taste)
  • Ginger paste(1tbsp)
  • Garlic paste (1tbsp)
  • Garam masala/Tandoori masala(1tsp)
  • Turmeric powder(1tsp)
  • Nutmeg powder(1/4tsp)
  • Salt to taste

Preparation



  1. Marinate shrimp with all the above  ingredients for half an hour ,not more than that at cool room temperature.
  2. (If u have large shrimp, sometimes it does not cook properly in the oven,in that case u may first boil the shrimp in salt water and then marinate.)
  3. Pre-heat oven at 400 degree and thread 4 shrimp onto each skewer, leaving small spaces between them. Put on a  baking tray.
  4. Broil 5-8 min at a time and then turn the shrimp and again broil for 5-8 min.
  5. The shrimp should cooked like golden brown.
  6. Now your Shrimp Tikka is ready.Serve hot with chutney and fresh chilled orange juice.




Orange Juice

  • Fresh Orange(2-3)
  • Sugar(2tsp)

Direction



  1. Cut each orange into half. Squeeze into a glass. 
  2. You may also use a citrus juicer to do this. 
  3. If you want less pulp, use a hand juicer with a strainer.
  4. Keep the juice in fridge in half an hour.
  5. Serve chilled.

Hariyali Paneer Tikka


Ingredients
  • Paneer (200 gm,Blanch and cut it into cubes)
  • Gram flour(2tbsp)
  • Corn flour(1tbsp)
  • Maida(1tsp)
  • Jaljeera/Pani puri Masala powder(1tbsp)
  • Garam Masala(1/2 tsp)
  • Yogurt(2tbsp)
  • Salt to taste
  • Coriander(1 cup)
  • Mint leaves(1/4 cup)
  • Green chillies (4-5)
  • (Grind Coriander,mint and green chili to a coarse )
  • Red,green,yellow,orange bell pepper, onion,tomato(1/4 cup each, cut into cubes)
  • Oil for shallow frying.
Preparation

  1. Mix all the above ingredients with the paneer. (Except onion,tomato,bell peppers). Marinate and keep aside for ½ hour.

2. In a pan add sweet bell peppers,onion,tomato,garam masala and saute for 1 min(without oil), then take it out in a plate.

3. Now shallow fry the paneer on a tawa.
4. Arrange the fried paneer cubes with sauted bell peppers,tomato and onion in a skewer or bamboo stick.

5. Grill the paneer skewers for 2 min in the griller or oven.
6. Now your Hariyali paneer tikka is ready. Serve hot with green chutney.

Paneer & Mushroom Tikka


 
Ingredients
  • Paneer (200 gm)
  • Button Mushroom(200 gm)
  • Green capsicum/green bell pepper(1/2 cup)
  • Red capsicum/red bell pepper(1/2 cup)
  • Yellow capsicum/yellow bell pepper(1/2 cup)
  • Orange capsicum/orange bell pepper(1/2 cup)
  • Onion(1/2 cup)
  • Baby tomato/Grape tomato(1/2 cup)
  • Yogurt(3tbsp)
  • ginger(1 inch)
  • Garlic(5 cloves)
  • Green chili(2-3)
  • Tandoori masala (2tsp)(you can use home made one or ready made)
  • Chat masala(2tsp)
  • Lemon juice(2tsp)
  • Fenugreek leaves/kasuri methi(2tsp)
  • Turmeric powder(1/2 tsp)
  • Red chili powder(2tsp)
  • Bamboo stick/BBQ skewer(5-6)
  • Salt to taste
  • Oil (3 tsp)
Preparation

  1. Cut paneer,onion,all capsicum into cubes. keep mushroom and baby tomato as it is.
  2. make a fine paste of garlic, ginger and green chili.
  3. Now in a large bowl, add ginger-garlic paste,yogurt,all vegetables, paneer, tandoori masala, fenugreek leaves,turmeric powder, red chili powder, lemon juice,chat masala, salt and oil.
  4. Mix them as all are well coated.keep them 4-5 hours in side the fridge.
  5. After 4-5 hours, insert the vegetables, paneer one by one through the skewer/bamboo stick(soaked in water before 1 hour).
  6. Pre heat the oven for 10 min. now place an aluminum foil/baking tray in side the oven and put the vegetable/paneer skewer on it.
  7. Bake  on 400 degree Fahrenheit for 20 min and broil for 3 min.Take out the baking tray from the oven.
  8. Now your Paneer and Mushroom Tikka are ready.Sprinkle some chat masala on it. Serve hot with mint chutney.

Chicken Tikka



Ingredients

  • Chicken (500 gm)
  • Ginger paste (1 tbsp)
  • Garlic Paste (2 tbsp)
  • Yogurt(4 tbsp)
  • Tandoori Masala(1tbsp)
  • Coriander powder(1tsp)
  • Red Chili powder(1 tsp)
  • Fenugreek leaves (1 pinch)
  • Lemon juice(1 tsp)
  • Red /orange food color(1 pinch/Optional)
  • Salt to taste
  • Oil (1 tbsp)
  • Chat masala(1 tbsp)
  • Bamboo sticks (5-6) Soaked before half an hour in water.


Preparation

  1. Cut the chicken into small pieces, wash them and drain the water properly.
  2. Take a bowl,marinate the  chicken pieces with ginger-garlic paste, yogurt,tandoori masala, coriander powder, red chili powder, fenugreek leaves(kasuri methi), lemon juice, red/orange food color and salt.
  3. Mix it well and keep 3-4 hours inside the fridge.
  4. After 3-4 hours keep out from the fridge and insert the chicken pieces into the bamboo sticks  or screwer or on the baking tray.
  5. Now pre heat the oven at 350f for 10 minutes.
  6. Now place the chicken sticks in the oven, bake for 5 min and turn the sticks after 5 min, greeze some oil and bake another 5-7 min. Broil for 2min.
  7. (If you have no oven, you can make it by your frying pan/tawa by add some oil and fry it for 8-10 min)
  8. Now your Chicken Kebab is ready . Sprinkle some Chat masala on it. Serve hot with onion sliced and coriander-mint chutney.
