Hyderabadi Prawn Biryani



Ingredients
  • Prawn (500 gm)
  • Basmati Rice (500 gm)
  • Onion Sliced (2-3 big size)
  • Ginger- garlic Paste (2 tsp, 1tsp each)
  • Yogurt (1 cup)
  • Turmeric pwd(1/2 tsp)
  • Red chili pwd (2 tsp)
  • Sahi jeera(1/2 tsp)
  • Cardamom(4-5)
  • Cloves (4-5)
  • Cinnamon sticks (3-4)
  • Star anise (1-2)
  • Big cardamom (1-2)
  • Bay leaf(1-2)
  • Black pepper(5-6)
  • Green chili (3-4)
  • Mint leaves(1/2 cup)
  • Curry leaves(5-6)
  • Biryani masala(3 tsp)(I use MDH)
  • Cumin pwd(1tsp)
  • Coriander pwd (1tsp)Coriander leaves for garnishing
  • Salt and oil as needed
  • Ghee (1tsp)
  • Orange food color (a pinch/ optional)


Preparation
  •   In a bowl take yogurt, turmeric pwd, red chili pwd, cumin and coriander pwd, biryani masala, green chili, salt, ginger-garlic paste,mint leaves, curry leaves and prawns.



 







  • Mix all and keep for half an hour.
  • Soak basmati rice  for 30 min.
  • In the mean time fry the sliced onion till golden brown and crispy.
  • Now take a heavy bottomed pan, add 6-7 tsp oil, then add the prawn marinade and spread it even.

  • Heat water in a vessel, add all the whole spices, mint leaves, oil, salt, 1 tsp biryani masala. (see in the pic)
  • Bring water to boil and add the soaked rice,boil the rice for 3-4 min in high flame.The rice should be half cooked.
  • Strain the water from the rice immediately.


  •  Spread the half cooked rice over the marinated prawn, add mint leaves, curry leaves, fried onions,sprinkle the rest biryani masala, some oranged colored water and ghee.
 
  •              Cover it and cook 8-10 min in high and 5-7 min in low flame.
  •              Switch off the flame amd leave it for 10 min. Do not open the lid immedeately.

  • Now your Hyderabadi Prawn Biryani is ready. Garnish some coriander leaves. Serve hot with yogurt raita and raw onion.

Prawn in Coconut Paste



Ingredients

  • prawn (15-20 pieces)
  • Onion chopped(1/2 cup)
  • Tomato Chopped (1/2 cup)
  • Coriander leaves (1/2 cup)
  • Garlic (4-5 colves)
  • Green chili (1-2)
  • Coconut paste (1/2 cup)
  • turmeric pwd (1 tsp)
  • Red chili pwd (1 tsp)
  • Cumin seeds( 1/2 tsp)
  • Oil as needed
  • Salt to taste




Preparation

1. Make a paste of coriander leaves, garlic, greenchili.
2. Marinate prawn with this green paste, turmeric pwd, red chili pwd and salt. Keep for half an hour.
3. Heat oil in a pan, add  cumin seeds, chopped onion one by one.
4. Add chopped tomato when the onion becomes golden brown.
5. Fry for 2-3 min and add the marinated prawn.
6. Cook for 4-5 min and add coconut paste. keep stiring in between.


7. Now your prawn in coconut paste is ready. Serve hot with Roti or paratha

Nawabi Jalpari


Ingredients


  • Prawn (1/2 kg, peeled and devained)
  • white mustard paste(2tbsp)
  • Besan (2tsp)
  • Ginger paste (2tsp)
  • Garlic paste (2tsp)
  • Tandoori masala (2tsp)
  • Lemon juice(1 tbsp)
  • Red chili powder (1/2 tsp)
  • Yellow food colour (a pinch) optional
  • oil (2tsp)
  • Salt to taste


Preparation



1. Make a  paste of mustard paste,besan, ginger, garlic paste, tandoori masala
lemon juice, chili pwd, yellow food color, oil, salt.
2. Add prawn to the paste and mix well. Marinate  for 3-4 hours.
3. Now grease the baking tray and place the prawn one by one . Keep some space
in between the prawns.
4. Bake at 400 degree for 10 min of each side.
5. Now your Nawabi  Jalpari is ready. Serve hot with some salad.

Bhapa Chingri (Steamed Prawn)




Ingredients

  • Shrimp/ prawn/chingri devained & cleaned(10-12 pieces)
  • Mustard seeds paste(2 tbsp)
  • Kalonji seeds/Kala jeera(a pinch)
  • Coconut (grated or paste, 1tbsp)
  • Ginger grated(1tsp)
  • green Chili(2-3)
  • Turmeric pdr(1tsp)
  • Mustard  oil(2tbsp)
  • Water (1/2 cup)
  • salt to taste










Preparation

  1. In a microwave safe bowl,  put all the ingredients together  and mix well
  2. Cover a lid on the bowl and  cook for 5 minutes, check if the prawns have become tender.(May take more 3-4 min)
  3. Alternatively,you can make it on gas also by taking a small steel tiffin box and put all the ingredients in it .Take 1 glass of water in the pressure cooker and put the tiffin box and boil for 8-10 min on mediun heat without whistle. 
  4. When the oil is ooze out, then stop cooking and take it out.
  5. Now your Bhapa Chingri  is ready. Serve with warm rice.

Prawn Do Pyaza

Ingredients

  • Prawn(500gm)
  • Onion sliced(1 cup)
  • Onion cube(2 cup)
  • Ginger-garlic paste(2tbsp)
  • Tomato chopped(1 medium size)
  • Turmeric pwd(2tsp)
  • Red chili pwd(2tsp)
  • Coriander pwd(2tsp)
  • Garam masala pwd(1tsp)
  • Bay leaf(1)
  • Sugar (1tsp)
  • Lemon juice(1tsp)
  • Salt to taste
  • Oil and water as needed

Preparation
  1. Take the cleaned and washed prawn in a bowl and marinate with turmeric,red chili,coriander pwd,salt,lemon juice.
  2. Mix well and keep inside the fridge for half an hour.
  3. Fry the prawn and keep aside.
  4. Now heat the oil in a pan, put bay leaf,sliced onion, fry till golden brown.
  5. Add ginger-garlic paste,chopped tomato,turmeric,red chili,salt to it. Fry till the masala leaves oil on it.
  6. Add fried prawn and cook for 4-5 min.
  7. Add Cubed onion,garam masala,water,sugar to it and cook for 2-3 min. switch off the flame. sprinkle some coriander leaves on it.
  8. Now your Prawn Do Pyaza is ready. Serve with Roti or Naan.

Kadhai Prawn


Ingredients
  • Prawn (medium size,peeled and deveined,500gm)
  • Onion chopped(2 medium size)
  • Tomato chopped(2 medium size)
  • Tomato puree (5-6 tbsp)
  • Dry chili(1-2)
  • Coriander seeds (2tsp)
  • Cumin seeds (2tsp)
  • Green chili(cut into thin strips-2)
  • Ginger(cut into thin strips-1 inch)
  • Fresh coriander leaves chopped(2tbsp)
  • Black pepper(whole,5-6)
  • Garam masala pwd(1tsp)
  • Red chili pwd(1tsp)
  • Turmeric pwd(1tsp)
  • Salt to taste
  • Oil and water as needed

Preparation

  1. Take 1-2 dry chili,cumin seeds,coriander seeds,black pepper and make a course ground powder.Keep it aside.
  2. Heat oil in a pan, put ginger strips,green chili strips,onion chopped and fry for 3-4 min till light brown.
  3. Add tomato chopped,tomato puree and fry it till tomato boils and oil ooze out.
  4. Add red chili pwd,salt,turmeric pwd,ground powder(coriander,pepper,cumin,chili),coriander leaves and mix it well.
  5. Put prawns and add little water and cook  2-3 min till prawn boils.Add garam masala.
  6. Now your Kadhai Prawn is ready.Serve with rice or Roti.

Prawn Chilli


Ingredients
  • Prawn(200gm)
  • Onion (1 large)
  • Garlic chopped(2tbsp)
  • Capsicum/Green bell pepper (1 medium)
  • Green chili(2 medium)
  • Cornflour( 2tsp)
  • Soya sauce(2tsp)
  • Red chili paste(optional, 1tsp)
  • Tomato kechup (2tsp)
  • Black pepper powder(1/2 tsp)
  • Spring onion(optional)
  • Salt to taste
  • Oil as needed

Preparation
  1. In a bowl, marinate prawn with cornflour, salt,water and mix well and keep aside.
  2. Cut onion, capsicum into cube or julian size, chopped green chili.
  3. Heat oil in a deep pan and deep  fry the marinated prawn. keep them aside.
  4. Now heat oil in a frying pan, add onion,capsicum, chopped garlic, saute for 2 min.
  5. Add soya sauce,red chili paste (or red chili sauce),tomato kechup,green chili,salt one by one.
  6. Add little(2tbsp) water and fried prawn, saute them for few min.
  7. At last add black pepper and spring onion.
  8. Now your Chilli Prawn is ready. Serve as stater or with noodles or Roti.

Prawn Malai Curry



Ingredients
  • Prawn (1/2 Kg)
  • Onion(1 medium)
  • Garlic(5-6 cloves)
  • Ginger(1 inch)
  • Coconut milk(1 cup)
  • Puppy seeds paste(1/2 tbsp)
  • White mustard seeds paste (1/2 tbsp) Optional
  • Coriander powder (1 tbsp)
  • Red chili powder (1tbsp)
  • Turmeric powder (2 tbsp)
  • Garam masala (1 tbsp)
  • Sugar(1tsp)
  • Water (1/2 cup)
  • Salt to taste
  • Oil

Preparation
  1. In a bowl, take prawn, salt and turmeric powder and mix it well.
  2. Heat a pan add some oil and fry the prawn till the oil leaves out.
  3. Blend onion, garlic and ginger and make it a fine paste.
  4. Now heat a pan, put some oil , then add the onion, ginger, garlic paste to it.
  5. Add red chili powder, turmeric powder, salt, coriander powder, garam masala and fry it for 4-5 minutes.
  6. Then add coconut milk , puppy seeds paste, white mustard seeds paste, sugar,  water and leave for boiling
  7. Add the fried prawn to the gravy and cook for 2-3 min.
  8. Now your prawn malai curry is ready. Serve it with Rice.
