Ingredients
- Mutton(1/2 kg)
- onion sliced(2 large)
- ginger paste(2 tbsp)
- Garlic paste(2 tbsp)
- Red Chili powder(2 tbsp/adjust to your taste)
- Fennel seeds powder(1tbsp)
- Turmeric powder(1 tsp)
- Asafoetida/hing(1/2 tsp)
- Nutmeg powder(1/2 tsp)
- Dry ginger powder/ amchur powder (1 tbsp)
- Cinnamon (1/2 inch)
- Cardamom(1-2)
- Bey leaf (1-2)
- Yogurt (4 tbsp, whisked)
- Oil(3-4 tbsp)
- Salt to taste
- water
- Coriander leaves for garnishing
Preparation
- Take oil in a pressure cooker or pan, heat it.
- Put whole cinnamon, cardamom, bay leaf and then sliced onion.
- Fry the onion till it becomes golden brown.
- Add ginger, garlic paste and fry it.
- Then add mutton and saute them for 2-3 minutes.
- Add 2 cups of water, salt, red chili powder, turmeric powder, nutmeg powder, asafoetida, fennel seeds powder.
- Then add whisked yogurt to it, mix it well and close the lid of the pressure cooker.
- After 2-3 whistles, turn off the heat and let the lid be closed for 5 min.
- Now your Mutton rogan Josh is ready. Garnish with some chopped coriander leaves.Serve it with roti or naan.
