Pav


Ingredients

  • All purpose flour/ Maida (4 cups)
  • Active dry yeast (1 1/2 tsp)
  • Sugar (1 tbsp)
  • Salt (1 tsp)
  • Lukewarm water (1 1/2 cup)
  • Unsalted Butter (2tbsp)
  • Maida  for dusting (2tbsp, if needed)
  • Egg wash(1-2 eggs)/milk (2tbsp)



Preparation

  1. Take the lukewarm water in a small bowl, add dry yeast,sugar, mix with a spoon and leave for 15 min.
  2. Take  maida in a wide bowl, add butter,salt,slowly add yeast mix water. Knead the dough by hand or by Hand mixer for 15 min.
  3. After kneading, leave the dough for 2 hours cover with a towel. After 2 hours the dough should double in size.
  4. Then take the dough and again knead by hand about 10 min. Leave the dough for 1/2 hour.
  5. Now grease the baking tray and divide the dough into 15 equal pieces.shape the pieces into a ball.
  6. Place them in the greased baking tray about 1/4" apart in 3 rows of five each.
  7. Cover them with a towel and allow them to rise for 30 minutes.
  8. Brush each balls with egg wash or milk properly.
  9. Bake them at 220C (425F) for 10 minutes till the rolls have risen and started browning.
  10. Take them out of the oven and quickly brush them with melted butter and bake them for another 5 minutes till the tops have browned well. Take the rolls out and let them cool on a rack.
  11. This recipe makes one sheet of 15 pavs.
  12. Now the Pav is ready. Serve with Bhaji, lemon and raw onion.
