Mutton Korma


Ingredients




  • Mutton (1 kg)
  • Onion (3 large. finely sliced)
  • Tomato paste(2 large)
  • Ginger paste(2 tbsp)
  • Garlic paste (2tsp)
  • Yogurt (2tsp)
  • Sahi jeera(1/2 tsp)
  • Cardamom(2, medium size)
  • Cinnamon stick (3-4 )
  • Star anise(2 pods)
  • Clove (4-5)
  • bay leaves(1-2)
  • Turmeric powder(1 tsp)
  • Chili powder (2-3 tsp)
  • Fresh methi leaves or Kasoori methi (dried) (2 tsp)
  • Garam masala(1tsp)
  • Mustard  or vegetable oil (4-5 tbsp)
  • Salt and water as needed






preparation



  1. Marinate the mutton by adding yogurt and  some turmeric powder and salt for an hour.
  2. Heat oil in a pressure cooker, add sahi jeera,cardamom,cinnamon,star anise, clove,bay leaves.
  3. Now add onions, fry till it becomes translucent and add ginger & garlic paste.
  4. Fry them till the raw smell goes off.
  5. Add tomato paste and little salt. Mix it all together and cook it in medium heat.
  6. Now add turmeric, chili powder,salt to taste. Add the marinated mutton.
  7. Mix it well and let the mutton cook in medium heat for 5-6 minutes, stir in between.
  8. Add fresh methi leaves or kasoori methi (whichever you have) and garam masala.
  9. Finally add 1 to 11/2 cup of water(adjust according the consistency you want) and  cook for 2-3whistles in medium heat.
  10. Let the pressure cooker be cooled for 5 min.
  11. Now your Mutton Korma is ready. Serve hot with jeera rice or plain rice or naan and papad.

Mutton Curry/Mangshor Jhol


Ingredients
  • Mutton (1/2 kg)
  • Ginger- garlic paste (4 tbsp)
  • Onion sliced (2 large)
  • Red chili powder(2tbsp)
  • Turmeric powder (2tbsp)
  • Garam masala powder(1 tbsp)
  • Potato (2 medium size)
  • Oil (mustard oil)
  • Salt to taste
  • water as needed
Preparation
  1. Take a bowl, add mutton pieces, turmeric powder, salt and mix it. marinate it 1 hours.
  2. Now peeled and cut the potatoes, wash them and keep aside.
  3. Take a pressure cooker add mustard oil, when the oil is hot add the potatoes,fry them till golden brown.
  4. Take out the fried potatoes in a plate and keep aside.
  5. Now you can use the same oil or add some more oil to it in the pressure cooker.
  6. Add sliced onion, fry till golden brown and add ginger-garlic paste,turmeric,red chili pwd.
  7. Fry for 3-4 min and add marinated mutton.
  8. Cook it for on high flame till the mutton leaves water(juice).
  9. When the mutton leaves water, cook on low flame till all the water evaporate and it becomes dry.
  10. Now add water and fried potatoes, some salt, garam masala and cover the lid.
  11. After 2 whistiles turn off the heat. Let it  cool down for 4-5 minutes.
  12. Now your Mutton Curry/Mangshor Jhol is ready. Serve it with rice , Roti.

Mutton Biriyani


Ingredients:

For marination
1 kg Mutton 
5 tablespoon ginger paste 
3 tablespoon garlic paste 
5 table spoon ghee/butter
1 cup yogurt
1 tea spoon Turmeric powder 
2 tea spoon chili powder 
1 tea spoon corriander powder 
4 tablespoon biriyani masala powder(optional)
½ cup fried onion (fry sliced onion with cornflour till golden brown)
Mint leaves 
Coriander leaves 
Salt to taste
Lemon juice

For Preparing Rice:
3 cups basmati rice/long grain rice
2 tspoon oil
cinnamon
cardamom
big cardamom
cloves
Black pepper
Bey leaf
Saffron(add with ½ cup of warm milk) 
Method

First take all the ingredients for marinating.Store the Marinate mutton for 1 hour in the fridge.  After 1 hour , take a pan with 5 1/2 cups of water and add 2 tea spoon of oil and leave for boiling. Take a small clean cloth and put all  the ingredients (preparing for the rice) except the rice & saffron and bind the cloth tightly, put inside the boiling water.After 2 minutes put the rice for the boiling and boil upto 80%.

Then take a big pan put on the fire, put the marinate mutton, on mutton put  some  boiled rice and make a layer. On the rice layer put some fried onion, mint leaves, coriander leaves. Again put some rice and put fried onion, mint leaves, coriander leaves, saffron milk and butter. Now close the pan tightly. Keep it 30-40 minutes on low heat. After that  mutton biriyani is ready and serve it with the onion raita/salad.
