Mutton Rogan Josh



Ingredients

  • Mutton(1/2 kg)
  • onion sliced(2 large)
  • ginger paste(2 tbsp)
  • Garlic paste(2 tbsp)
  • Red Chili powder(2 tbsp/adjust to your taste)
  • Fennel seeds powder(1tbsp)
  • Turmeric powder(1 tsp)
  • Asafoetida/hing(1/2 tsp)
  • Nutmeg powder(1/2 tsp)
  • Dry ginger powder/ amchur powder (1 tbsp)
  • Cinnamon (1/2 inch)
  • Cardamom(1-2)
  • Bey leaf (1-2)
  • Yogurt (4 tbsp, whisked)
  • Oil(3-4 tbsp)
  • Salt to taste
  • water
  • Coriander leaves for garnishing

Preparation
  1. Take oil in a pressure cooker or pan, heat it.
  2. Put whole cinnamon, cardamom, bay leaf and then sliced onion.
  3. Fry the onion till it becomes golden brown.
  4. Add ginger, garlic paste and fry it.
  5. Then add mutton and saute them for 2-3 minutes.
  6. Add 2 cups of water, salt, red chili powder, turmeric powder, nutmeg powder, asafoetida, fennel seeds powder.
  7. Then add whisked yogurt to it, mix it well and close the lid of the pressure cooker.
  8. After 2-3 whistles, turn off the heat and let the lid be closed for 5 min.
  9. Now your Mutton rogan Josh is ready. Garnish with some chopped coriander leaves.Serve it with roti or naan.
