
Ingredients
- Potato boiled (2 medium size)
- Spinach/Palak (15-20 leaves, blanched)
- Green peas (boiled, 1/4 cup)
- Green chili(1-2 chopped)
- Coriander leaves(chopped, 2tsp)
- Grated ginger (2tsp)
- Cornflour (4tsp)
- Cumin pdr(1tsp)
- Chaat Masala(1tsp)
- Salt to taste
- Oil for shallow fry
Preparation
- Peel the potatoes and mash them together with the green peas.
- Squeeze out excess water (very important) of palak and chop them finely or mash them.
- Now mix the potatoes, peas, cornflour and spinach together
- Add chopped green chilies, chopped coriander leaves , grated ginger, chaat masala, cumin pdr and salt. Mix well.
- Divide the mixture into equal portions. Shape them into a ball and then press it in between the palms to flatten it. These are now called tikkis or kebab.
- Dust each of the tikkis with the corn flour and shallow fry them on medium heat for 5-6 minutes on each side until they becomes crisp or golden.
- Now Hara bhara kebab is ready. serve with mint chutney or tomato ketchup.

- Palak/Spinach (2 cups)
- Wheat flour (2 cups)
- Salt (1 tsp)
- Water and oil/butter as needed
Preparation
- Wash and cut the palak into small size.
- Boil the palak in hot boiling water for 2-3 min.
- Let it cool down and keep aside.
- Blend the cooled palak into a fine paste.
- Take wheat flour in a bowl, add salt, palak paste and make a smooth dough by adding water.
- Take a small portion of dough and make it a round shape by the help of two hands.
- Roll it into a paratha/Roti shape by the rollong pin and board.
- Heat a frying pan/tawa, put the paratha and turn it after every 1 min and add ghee/butter/oil.
- Now your Palak Paratha is ready. Serve hot with any curry or chutney.

- Besan/gram flour(2cups)
- Turmeric pdr(1/2 tsp)
- Red chili pdr(1/2 tsp)
- Ajwain(1 tsp)
- Roasted cumin pdr(1tsp)
- Green chillies crushed(1-2)
- Ginger crushed(1")
- Salt to taste
- Oil for frying
Preparation
- Mix green chillies , ginger, ajwain,turmeric,red chili,cumin pdr and salt to chopped palak.
- Then add gram flour to the palak till the batter is of semi-solid consistency.
- Dont add water, the batter should be mixed in the juice of palak itself.
- Heat oil in a pan.Now take the batter and drop in small portions into the oil using your hand.
- Fry till the pakodas turns to light brown color.
- Now your Palak Pakodas are ready. Serve hot with tomato ketchup & onion slices.
